About Jose Diaz
I was born on the small island of Puerto Rico, and was raised in Florida, and upstate New York. I have been using knives, as tools since I was a teenager. I've lived in the wilds of Alaska. I am a hunter, hiker, and fishermen. In both my professional and personal life, I have seen knives used as tools on an everyday basis.
I live and make these tools in Ellensburg, at my home forge. I am an avid outdoorsman and test my tools. I guarantee the ordinary use of what I make and will sharpen and will do my best to repair your tool for its lifetime.
These tools are made from high-carbon steel and should be cared for accordingly (otherwise they will stain or rust). Care and feeding of high carbon knives: High carbon knives perform better, and stay sharp longer, but they do require a little attention. They should not go into a dishwasher. They should be washed by hand and hand dried. A little cooking oil will go a long way toward keeping the knife from rusting after washing with soap and water. Cutting acidic fruits and vegetables will stain the knife, do not be alarmed, it will not affect the cutting performance, but only bring out the natural character of the steel.
